F23 (W8): Autumn Rolls On

Dear CSA Members + Farm Community,

We saw the first light frost of the season last Tuesday— nothing to worry about, it was only in low lying areas and none of our crops were affected— which was followed by some amazing sunny afternoons. This is such a rewarding time of year— all the hard work prepping fields and planting in the late summer heat is coming to fruition. Harvest days are busy, with a wide variety of late summer stuff still hanging on and fall and winter crops coming in strong. We’re also finding time to squeeze in more prep for winter plantings, with the hopes that we can get things planted and established before it gets too cold.

This week, you might be seeing beets in your share. Sweet, earthy, and strinkingly red (or yellow or even candy striped), these babes are packed full of flavor, fiber, and antioxidants. I love them roasted and tossed with a citrusy dressing and some goat for a filling salad, but they’re equally delicious raw and shredded with apple and carrot for a quick and easy slaw. If you’re into chard, try this recipe for a simple grain and veggie salad that uses both the roots and the tops. And if you’re completely anti-beet but you have a sweet tooth, maybe this delicious (and gluten free) beet brownie recipe will change your mind— trust me, they are SO GOOD!
