F24 (W6): Catching Up & Helping Out

Dear Farm Community -

We got back to work last week on the projects that were tabled by Hurricane Helene. Lots of transplanting fall veggies: fennel, green onions, bok choy, cilantro, parsley, lettuce, and little gems oh my! We also had the pleasure of witnessing a pretty epic sunrise on Tuesday morning - everybody on the farm was gazing on in awe. It was an amazing way to start the day and remind us of the beauty of nature.

All the while we’re still remaining very aware of the destructive power of nature, and the devastation that continues to come to light in Western North Carolina - especially how it has affected farmers in that area. We see the flooding and farms swept away and understand that it easily could have been us. Months, years, and lifetimes of work were wiped out in just hours as farms were washed away and acres of crops destroyed. If you’re looking for a way to help farmers affected by the flooding, we would like to direct you towards The Farmer Fund. Since 2015, Georgia Organics and its partners have been helping farmers recover from disasters and emergencies through this fund. They have years of practice putting funding into action and using it to make noticeable differences in lives and communities. If you have the means to do so, this is an avenue where you can be assured your contribution would make a meaningful difference.

After a big push last week to get the Recipes section of our website in action, you can now browse info and recipes for nearly any veggie item you come across in your CSA or at market! We will continue to add more as time goes on, but it’s looking pretty darn useful, much more so than the two recipes holding down the fort last week! Over 300 recipes now at your fingertips, organized by vegetable. With the carrots in your shares this week you can look under C for Carrot and find 11 delicious ideas! Might we suggest Carrot Salad with Harissa, Feta, and Mint? Or perhaps use those beautiful carrot tops (they are looking perfect right now) for a Carrot Top Chimichurri that makes a fantastic accompaniment to salads, roasted veggies, with bread, or on top of any protein. A personal favorite is Chimichurri Baked Salmon - just heap it on top of a salmon filet and bake in the oven - the flavors are amazing. Head down to R for Radishes and check out this recipe for Radish, Orange, and Arugula Salad with Cumin Vinaigrette (swap the arugula out for our spicy mix if you prefer!) There’s so much available to browse, we hope you find some inspiration and a delicious meal.

Onwards and upwards,
Diamond Hill Farmers
