FEB24 (W3): Haulin’ Dirt
Dear Farm Community -
We’ve been moving some serious soil ‘round these parts lately! Last week we worked on re-shaping some beds on the north end of the property and digging drainage to remedy the soggy spots that are often left after heavy rains. Believe it or not our fields are still soggy after the intense rain we got last Monday and the preceding week! Let’s call it inspiration to tackle these problem areas. Hopefully with this work done our plants will be a lot happier when Mother Nature gives us too much of a good thing.
We also put in some hours transplanting more flowers. This year is going to be so full to the brim with blooms, I can’t hardly wait! We’re seeing our poppies, anemones, ranunculus, tulips, and daffodils really starting to take off. They’ve been a hit at our Atlanta markets and we’re eager for our return to the Athens Farmers Markets in March. This week we’re planning to get our lisianthus in the ground - those blooms are expected for summer, and we’ll have lots of different flowers along the way. For all y’all in our February CSA, it’s going to be another delicious week! Our beets are looking gorgeous from head to toe (… or, leaf to root). This sweet cool-weather root veggie is awesome this time of year. It’s a treat that we also happen to be in peak citrus season because this beet, orange, and arugula salad is killer! Grab some local citrus and get cookin’ this delicious dish that could be either a main or a side. Try them roasted with balsamic and honey as a standalone side or tossed in a salad with goat cheese. I’m also very excited to report that the greens on our beets are looking beautiful and lush too. While most people tend to toss these aside not knowing any better, you need not waste them - you are officially invited to join the Beet Green Lovers Club!! Beet Greens are delicious and nutritious with a beet-y flavor that cook up similar to chard. Super easy to cook into a fast and yummy side, this 15-minute recipe has you simply sauté the greens with a bit of garlic, lemon and pepper. You can also throw them in a curry or stir fry to add a little green to your dish!
